How do enchantments work? Do they run out after a certain amount of time, or do they just remain while you can maintain the energy degeneration requirements?

Depends on the enchantment. Monks have some enchantments that last until the monk gets rid of it or it is removed. Other enchantments have time limits. Just look at the specific enchantment description.
